Chicken Roulade stuffed with bacon, cheese onion and red pepper

Recipe Ingredients for Chicken Roulade

24 ounce boneless, skinless chicken breasts, pounded thin
84 grams turkey bacon, chopped
1 tbsp. organic butter
1/2 onion, chopped
1 red pepper, chopped
5 oz. cheese, monterey jack, shredded
1 tsp. sea salt
1 tbsp. fresh basil, chopped
3 oz. honey mustard
1 tbsp cumin

Recipe Directions for Chicken Roulade

  1. Cook bacon in butter. Remove from pan to cool. Chop onion and add to pan, sautee and remove to mixing bowl. Chop bacon, shred cheese and add both to bowl with onion. Add basil and season. Set aside.

  2. Pound chicken into almost square shaped sheets, approx 1/4" thick. Divide mixture into four portions and put one portion into each breast. Spread filling into a line across the breast so you can wrap the chicken around the filling resulting into a roll. Place into a baking dish that has been thinly covered with a layer of honey mustard. Use the remaining honey mustard to cover the chicken thoroughly. Sprinkle cumin generously over top of each roll. Bake for 30 minutes. Cut into approx. 1/2" slices, arrange on a plate with rice and veggie. Serve immediately.
