Recipe Ingredients for Chicken Ropa Vieja

7 1/2 oz chicken breast
12 oz tomato sauce
1 sliced green pepper
2 cups canned corn
1 tbs cumin
2 tbs cilantro
1 pinch salt
1 pinch pepper

Recipe Directions for Chicken Ropa Vieja

  1. Boil chicken in salted water for 10 minutes

  2. In sauce pan, cook tomato sauce with green pepper with cumin, salt and pepper to taste

  3. Add chicken, cook for 5 minutes

  4. Microwave corn for 2 minutes to heat

  5. Serve in bowls, add corn on top

  6. garnish with cilantro
