Chicken roll ups with spinach and marinara

Recipe Ingredients for Chicken Rolatini alla Parmigiana

16 3/10 ounces boneless skinless chicken breasts
1 cup low fat cottage cheese
4 cups spinach, raw
3/4 cup mozzarella cheese, shredded
1 egg
3/4 cup breadcrumbs
1/2 cup parmesan cheese, grated
1 tsp extra virgin olive oil
1 cup marinara sauce

Recipe Directions for Chicken Rolatini alla Parmigiana

  1. Combine breadcrumbs and parmesan. Set aside.

  2. Combine cottage cheese, spinach (sauteed in olive oil), and half of the mozzarella. Set aside.

  3. Pound chicken.

  4. Fill with cottage cheese mixture and roll up.

  5. Dip in egg, then breadcrumbs.

  6. Bake at 450 for 25 minutes.

  7. Top with sauce and remaining cheese. Bake a few more minutes until bubbly.
