One-pot rogan josh recipe. This is traditionally a lamb dish, but I prefer it with chicken breast (I also don't keep fresh ginger so I use powder instead) . Serve with rice or naan. Original recipe is at http://www.route79.com/food/rogan-josh.htm

Recipe Ingredients for Chicken Rogan Josh

1 chicken breast
28 oz tomato puree
8 oz yogurt
1 large onion
5 cloves garlic
2 tbsp vegetable oil
1 teaspoon ginger powder
2 teaspoons salt
1 teaspoon turmeric
3 teaspoons garam masala
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon cayenne pepper

Recipe Directions for Chicken Rogan Josh

  1. Prep - Measure out all of the spices and combine into a single cup. Cube the chicken breast. Dice the onion and garlic.

  2. Heat the oil in a saucepan (3-quart size is just big enough for a doubled recipe)

  3. Sautee the diced onion on high heat until translucent.

  4. Add garlic and spices, cook for 5 minutes. The mixture will be mostly dry, with the spices coating the pieces of onion. Keep stirring to avoid burning.

  5. Add chicken, cook until it starts to brown

  6. Add tomato, then yogurt. Mix thoroughly and bring to a boil

  7. Cover the pot and simmer for 90 minutes, stirring every half hour
