Corn tortillas layered with chicken, roasted veggies, cheese, and enchilada sauce. Baked like a lasagna!

Recipe Ingredients for Chicken & Roasted Veggie Enchilada-Lasagna

12 tortillas 6" Yellow Corn Tortillas 24ct
2 cup, chopped or diced Chicken, Meat Only, Roasted
16 oz Enchilada Sauce
1 peppers Chipotle Peppers
7 oz Green Chile Peppers
2 clove Garlic
16 oz Tomatoes
1 medium Squash, Summer, Zucchini, Includes Skin
0.2 cup Olive Oil
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.75 cup Natural Shredded Cheese

Recipe Directions for Chicken & Roasted Veggie Enchilada-Lasagna

  1. -Blend the chipotle pepper, garlic, fire roasted tomatoes, green chiles, and oil to make a sauce. Set aside.

  2. -Broil a red bell pepper until slightly scorched on all sides. Remove from oven, place in a bowl, and cover with seran wrap. Set aside for 5-10 minutes. Then remove seran wrap and remove skin and seeds from pepper. Slice remaining pepper into strips.

  3. -Spread 1/4 cup enchilada sauce on the bottom of an 9x9 casserole dish.

  4. -Layer 4 tortillas over sauce, covering the whole bottom.

  5. -Ladle some of the blended chile sauce on top of tortillas. Cover sauce with some shredded rotisserie chicken, roasted pepper strips, and thinly sliced zucchini. Sprinkle a small handful of cheese over layer.

  6. -Cover with 4 more tortillas and repeat previous layer's toppings.

  7. -After creating 3 layers, cover with 4 more tortillas, 1/2 cup of enchilada sauce, and more cheese.

  8. -Cook on 350 degrees for 30 minutes.
