12 wooden skewers (8 inch), soaked in water for 30 minutes Substitutions Use light mayo instead of regular Substitute any firm-fleshed fish, such as halibut or tuna, for the chicken.

Recipe Ingredients for Chicken and Roasted Red Pepper Skewers

1 lb boneless skinless chicken breast
1 cup Mayonnaise
1 medium red pepper
1 clove garlic, minced

Recipe Directions for Chicken and Roasted Red Pepper Skewers

  1. THREAD 2 to 3 chicken pieces evenly onto skewer and place in shallow dish.

  2. MIX mayonnaise, red pepper and garlic until well blended.

  3. Pour over skewers and marinate 30 minutes in the refrigerator.

  4. Remove skewers from marinade; discard marinade.

  5. Place skewers on rack of broiler pan.

  6. BROIL 4 to 6 inches from heat for 10 minutes or until chicken is cooked through, turning occasionally.
