Chicken Roasted with Lemon, Dijon, and Sage

Recipe Ingredients for Chicken Roasted with Lemon, Dijon, and Sage

1/4 cup dijon mustard
1 tbsp lemon juice
2 tsp minced garlic
1 tsp sage
1/4 tsp black pepper
1 pinch salt
4 1/2 units poultry

Recipe Directions for Chicken Roasted with Lemon, Dijon, and Sage

  1. Preheat oven to 375.

  2. Combine dijon, lemon juice, garlic, sage, salt, and pepper to make a paste.

  3. Truss chicken and loosen skin over breasts and thighs. Rub half of the paste under the skin and half over the top. If using fresh lemon juice, place juiced rinds inside cavity.

  4. Roast chicken for 1 hour 15 minutes, or until the thigh reaches an internal temperature of 160 degrees.
