Can subsitute water for some of the chicken stock to reduce sodium

Recipe Ingredients for Chicken Risotto

3 c chicken stock
1 tbsp butter
1 small onion, chopped
3/4 c rice (arborio is best)
1 c chicken, chopped
1/2 c peas
3/10 c parmesan

Recipe Directions for Chicken Risotto

  1. bring stock to a boil, turn it down.

  2. in a seperate pan, melt butter & cook onion in it until softened (3m). Add rice, cook stirring often until rice turns opaque (2-3m)

  3. add 1/3c water and cook stirring constantly until almost completely absorbed.

  4. stir in enough hot stock to cover the rice throughly, continue to cook stirring constantly until nearly all the liquid is absorbed. repeat until rice grains are tender but slightly firm in the center.

  5. in last 3 min stir in chx and peas. when rice is just cooked add a final 1/3c of stock (or water if stock is gone) and parm.
