Recipe Ingredients for Chicken Risotto

2 chicken stock cubes
225 g long grain rice
170 g mushrooms
1 red pepper, chopped
1 onion, chopped
100 g frozen peas
10 g butter
225 g cooked chicken
730 ml hot water
5 ml parsley

Recipe Directions for Chicken Risotto

Place onions, pepper and butter into casserole and heat for 4 minutes. Add rice, stock cubes and hot water. Cook for 10 minutes uncovered. Add all other ingredients, cover and cook for a further 12 minutes. Stand for 5 minutes before serving.
