Chicken, rice and vegetable dish designed to be filling and use up any vegetables in the drawer at the time.

Recipe Ingredients for Chicken, Rice and Vegetable Stir Fry

150 grams chicken, white meat
1 tbsp butter
1 cup rice, basmati
1/4 cup onions, diced
1/4 cup scallions, sliced
1/2 cup mushrooms, sliced
1/2 cup zucchini, sliced
2 tbsp oil, walnut
1 cup chicken stock, fat free

Recipe Directions for Chicken, Rice and Vegetable Stir Fry

  1. Season and bake chicken. Slice into chunks.

  2. Melt butter in rice cooker, saute onion until tender, stir in rice and water and let the cycle complete.

  3. Add chopped vegetables to rice cooker and steam for 10 minutes.

  4. Heat oil in a 12" skillet until hot. Add rice mixture and chicken and stir fry, adding stock to deglaze pan.

  5. Reduce heat, continue adding stock and cook until mixture is moist but not soupy.
