A healthy take on stuffed peppers

Recipe Ingredients for Chicken and Rice Stuffed Peppers

9 1/2 oz green pepper
1 cooking spray
1/4 c. rice
1/4 t. salt
8 oz. chicken
2 T. shallots
1 clove garlic
1 cooking spray
4 oz. cherry tomato, halved
42 g. cheese

Recipe Directions for Chicken and Rice Stuffed Peppers

  1. Preheat the oven to 400 degrees.

  2. Core the pepper and cut it in half. Place on a prepared baking tray.

  3. Cook the rice in salted water until done. Cut the chicken into small pieces and saute in a large heavy skillet with cooking spray over medium high heat. When just about done, add shallots and garlic. Cook until the garlic is fragrant. Add the tomatoes and rice to the pan. Stir to combine well.

  4. Divide the rice and chicken mixture between the peppers. Bake in the oven for 20-25 minutes. Dot the top of each pepper with cheese and return to the oven until the cheese has melted, about 5 more minutes. Serves 2.
