Recipe Ingredients for chicken and rice stir fry

16 ounce chicken breasts
2 1/2 cups medium grain rice
1/2 medium onion
3/4 cup grated carrots
3/4 cup chopped eggplant
1/2 cup chopped zucchini
3/4 cup frozen peas
3/4 cup frozen corn
3/4 cup frozen green beans
1/4 cup soy sauce

Recipe Directions for chicken and rice stir fry

  1. Cut chicken breasts in bite size pieces. Saute chicken breasts in a small amount of olive oil. Season with garlic salt.

  2. Cook rice according to package directions.

  3. Add vegetables to chicken and saute until vegetables are tender. Add rice to chicken and vegables. Add soy sauce.
