Modified from the recipe in Sarah Kramer's La Dolce Vegan! this soup is easy, tasty, and doesn't make too much soup.

Recipe Ingredients for "Chicken" & Rice Soup for the Soul

6 oz Smart Strips Chick'n
1 onion
1 stalk celery
1 carrot
2 cloves garlic
3 cups vegetable broth
1/2 tsp marjoram
1/2 tsp thyme
1/4 tsp salt
1/4 tsp pepper
1/4 cup basmati rice

Recipe Directions for "Chicken" & Rice Soup for the Soul

  1. Cut chick'n strips into tiny pieces and set aside.

  2. Saute onions in oil until translucent. Add celery, carrots, and garlic and saute for an additional five minutes. Add the broth, chick'n cubes, spices and rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is done. Makes 4 1-cup servings (or 2 2-cup servings).
