Rice with chicken in broth with vegetables

Recipe Ingredients for Chicken and Rice soup

1 lb chicken thigh
2 cups celery
2 cups carrots
1 cup white onion
8 cups low sodium chicken broth
1 1/2 cups white rice
1 serving Vegetable Oil 100% Pure
2 cups water

Recipe Directions for Chicken and Rice soup

  1. add 1 Tbs Vegetable oil to large pot heat to high

  2. add chicken cook through

  3. Chop carrots, celery and onion

  4. remove chicken from pot set aside

  5. add onions cook till translucent

  6. add water, broth and rice bring to a boil

  7. add carrots and celery

  8. Reduce heat and simmer for 20 minutes

  9. Chop chicken into bite size pieces

  10. add chicken, continue simmer until chicken is heated

  11. Salt and Pepper to taste
