Recipe Ingredients for Chicken and Rice Soup

2 carrots
1 stalk celery
1 small onion
2 tbl olive oil
1/4 tsp pepper
1/2 tsp paprika
1/4 cup brown rice
1 quart water
1 quart chicken broth
4 oz chicken breasts
1 cup cauliflower
1/2 cup carrot
1 tbl corn starch
2 tbl cream cheese

Recipe Directions for Chicken and Rice Soup

  1. Finely chop the carrots, celery and onion. Heat the Olive oil in a large stock pot over medium high heat. Add chopped vegetables, pepper and paprika. Cook until vegetables are soft but not brown - 6 to 8 min.

  2. Add the rice and cook 1-2 min until the ends are translucent.

  3. Add the water, broth and bring to a boil. Add the chicken breasts and cover. Turn off the heat and let the chicken cook in the hot water until no longer pink, 25-30 min. Once chicken is cooked through, remove meat from pot and shred. Return it to the pot.

  4. Stir in the purees. In a small bowl mash the cornstarch into the cream cheese. Remove 1 cup of soup and whisk it into the cream cheese mixture until it is smooth and all lumps are gone. Stir the soup and cream cheese mixture into the pot and warm through if necessary. Stir in lemon juice just before serving.
