Just making this up to use up leftovers from a whole roasted chicken

Recipe Ingredients for Chicken and Rice Soup

300 g chicken, cut up
8 cups water
2 carrots
2 stalks celery
2/3 cup rice
1/2 cup chopped onions
3 chicken bouillon cubes
1/2 tsp. parsley
1/2 tsp. pepper
1 tsp olive oil
2 cloves garlic

Recipe Directions for Chicken and Rice Soup

  1. Chop all veggies and cooked roasted chicken.

  2. In large pot, heat oil and add onions and garlic. Cook till just translucent.

  3. Add water, carrots, celery, rice and chicken bouillon. Stir in other spices and cooked chicken pieces.

  4. Bring to a boil, then lower to a simmer for at least 30 minutes.
