Recipe Ingredients for *Chicken + Rice Soup, No Salt Added

3 oz Carrots, Baby
6 oz Vidalia Onion
6 oz Celery
9.5 oz Chicken
3 oz Parboiled Rice
1 tbsp Pepper, Black
80 oz Water

Recipe Directions for *Chicken + Rice Soup, No Salt Added

  1. Makes 5 servings of 1 cup each.

  2. Dice onion and celery. Either dice carrots or cut into circles. Boneless, skinless chicken breast works best for me. If your chicken breast is thawed, trim the fat, but do NOT cut into pieces. It's okay if it's frozen. Put everything, including rice and pepper, in a pot and cover with at least 10 cups of water; more if the chicken is still peeking above water level. Turn pot on at least medium, I turn it on higher usually because my chicken is almost always frozen and takes longer to cook. Bring to a slow boil until the breast is cooked through. Take the chicken out and shred with two forks (one to hold it down, one to shred it). Put the chicken back in the pot and let the liquid reduce until you get about 5 cups in the pot. I let everybody salt their own portion. For me, 1/4 tsp is about right. Sometimes I add a few cloves of minced garlic to this too.
