Hearty healthy soup -- Add other non-salt spices to flavor

Recipe Ingredients for Chicken Rice Soup_May 10

12 cups water
2 cups diced chicken
6 stalks celery
4 mushrooms, large
20 carrots, baby small
1 onion, large
120 g tomato
2 tsp minced garlic
1 tsp oregano, dry
1 cup rice, long grain brown dry
1/4 tsp salt
3 c spinach, raw
3 T olive oil
1 tsp chicken fat
1/2 tsp poultry seasoning

Recipe Directions for Chicken Rice Soup_May 10

  1. Cook rice in chicken stock (water+salt+chicken fat in recipe) for about 40 minutes.

  2. Dice and saute celery, onion and carrots in 2T or so olive oil.

  3. Add sliced mushrooms towards the end of the saute time.

  4. Add saute mix to rice & stock.

  5. Dice tomatoes and add to soup.

  6. Add garlic & spices as desired.

  7. Simmer until flavors blend.
