Home made - like noodle but with rice instead

Recipe Ingredients for Chicken Rice Soup - 1 cup

3 breast chicken
1 onion
1 tbsp olive oil
3 carrots, diced
3 stalks celery
5 cups water
2 cups chicken stock
2 tsp salt
1/2 tsp black pepper
8 oz Basmati White Rice
1/4 cup parsley, fresh

Recipe Directions for Chicken Rice Soup - 1 cup

  1. simmer chicken in water and stock - discard bones - cut into bite size pieces.

  2. Add carrots, celery and spices while chicken is simmering - OK to overcook so carrots aren't at all crunchy.

  3. Bring to boil and add rice, stir until it doesn't stick to bottom of pan and low boil for about 20 minutes. Allow to sit with lid on for awhile - top with parsley - fresh if possible.
