Recipe Ingredients for Chicken Rice Skillet

1 tablespoon olive oil
1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoon butter
8 oz broccoli (or green beans)
8 oz red pepper
8 oz onions
8 oz mushrooms
1 1/2 cups uncooked brown rice (Himalayan red rice preferably)
2 servings (1/2 teaspoon) lemon-pepper seasoning
1 teaspoon oregano, crushed leaves
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon cayenne pepper
4 servings (4 ounces) shredded Cheddar cheese, 2% Reduced Fat Milk

Recipe Directions for Chicken Rice Skillet

  1. In 12-inch skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 4 minutes, stirring occasionally, until no longer pink in center.

  2. Cook rice according to package direction.

  3. Add butter. Stir in vegetables, rice, lemon and pepper, garlic powder, onion powder, cayenne pepper, and oregano. Sprinkle with cheese; remove from heat. Cover and let stand about 5 minutes until cheese is melted.

  4. Makes about 2 cups per serving.
