Recipe Ingredients for Chicken and Rice

12 oz chicken
1 1/2 cup chicken broth
10 ounces couscous
1 1/2 cup chopped tomato
4 tbsp dried basil
1 cup chopped chives
1/4 cup olive oil
3 tablespoons white vinegar

Recipe Directions for Chicken and Rice

Bring chicken broth to a boil and add chicken. Reduce heat and cover. Simmer 10 minutes or until cooked throguh. Remove chicken from broth and let cool slightly. Add couscous/rice to chicken broth, cover and let sit for 10 minutes or until done. Meanwhile, chop chicken into bite-sized pieces. Fluff couscous/rice with fork. Add chicken, tomatoes, chickpeas, basil, green onion/chives, olive oil, vinegar and salt and pepper to taste to couscous. Toss gently to combine and chill at least 2 hours. Serve cold or reheated with a dollop of Greek yogurt.
