The rice part of "chicken and rice." This is actually simmered with the chicken pieces (bone, meat, skin) in it.

Recipe Ingredients for Chicken and Rice

2 tablespoons olive oil
2 cups chopped vidalia onion
1 1/2 oz scallions, chopped
3 1/4 cups water
1 1/2 cups white rice

Recipe Directions for Chicken and Rice

  1. Pour olive oil into pan.

  2. Add onion.

  3. After onions have cooked down, add water and rice.

  4. Place chicken pieces over everything.

  5. Cover chicken with scallions.

  6. Season with herbs and garlic.

  7. Let cook 45 minutes or until rice and chicken are done.
