Colombian style with some healthy changes ;)

Recipe Ingredients for Chicken with Rice

2 Serving Chicken
3 ounces Fresh Chopped Onions
1 Medium Tomatoes
1/2 cup Sweet Peas
2 frank 8 Jumbo Franks, Made with Turkey, Pork and Beef
0.5 g Seasoning
3 oz Ketchup
2 cup Rice, Brown, Long-grain
3 1tsp Olive Oil
1 tsp Salt, Table

Recipe Directions for Chicken with Rice

  1. Cook the chicken breast in water with salt and some of the chopped onion and tomato.

  2. When the chicken breast are done, set aside until cool down then shred it. Keep the broth.

  3. Cook the rice as directed on the package, but using the chicken broth you just made instead of water. (add water if broth is not enough).

  4. In a sauce pan big enough to fit the chicken, saute the rest of the onion and tomato, then add the chicken, the peas, the chopped franks and keep cooking for 5 to 10 min. more just to allow the flavors to mix.

  5. When the rice is done add the chicken mixture and the ketchup, stirring well.

  6. Serve and enjoy!
