Grilled Breast of Chicken with Mushroom rice and broccoli rabe.

Recipe Ingredients for Chicken with Rice and Rabe

360 g broccoli rabe
320 g Yellow Onion
10 g Garlic
60 g Long Grain Rice
225 g Chicken Breast
1/4 cups diced portabello mushroom
8 g parmesan cheese
1 tablespoon extra virgin olive oil
1 teaspoon crushed red pepper flakes
1/2 tablespoon black pepper

Recipe Directions for Chicken with Rice and Rabe

  1. Cut Broccoli Rabe into 1" long pieces and place into large frying pan. Chop yellow onion and mix with broccoli rabe. Mince Garlic and add to yellow and rabe mixture. Finely dice .125 cups of portabello mushroom and add to pan. Add extra virgin olive oil, crushed red pepper flakes, and .25tablespoons of black pepper to mixture. Saute on medium heat until onion and rabe are tender.

  2. Grill Chicken Breast until cooked. Season with Black Pepper and Rosemary.

  3. Begin boiling rice. Finely dice remaining mushrooms and boil with rice. Add Parmesan cheese and mix right before serving.
