I use minced onion and your own combination of spices instead of onion soup mix - salt, pepper, sage, paprika. It is less sodium because the onion soup mix is mostly dried chicken broth with salt. Use any type of milk that is low or non fat. You can use chicken fingers or slice raw chicken instead of the whole pieces .. this makes it easier to serve. I got this recipe from Sylvia Gasser in Oshkosh during our first years of teaching. We have enjoyed it many times.

Recipe Ingredients for Chicken En Rice - OSHKOSH

1 cup uncooked brown rice
1 cup uncooked white rice
8 oz nonfat chicken broth, low sodium
8 oz evaporated milk (nonfat)
11 oz mushroom soup, low sodium
11 oz cream of celery soup, low sodium
1/2 lbs. chicken breasts
1/4 lbs. chicken drumsticks
1/4 lbs. chicken thighs
1/4 cup dry onion soup

Recipe Directions for Chicken En Rice - OSHKOSH

  1. Spray large crockpot or deep large pan.

  2. Mix the soups, broth, and milk together with a whisk.

  3. Put half of the broth/soup/milk mixture in the bottom of the pan.

  4. Put rice over the top of it and stir.

  5. Lay chicken on top of rice.

  6. Sprinkle the dry onion soup mix or seasoning mix over the chicken.

  7. Pour the rest of the soups over the top.

  8. Sprinkle paprika over all.

  9. Seal with foil or cover and bake at 350 degrees for 1 hour. Remove foil and bake for another 1/2 to 1 hour.
