it's like a stir fry of chicken and vegetables and rice

Recipe Ingredients for Chicken-Rice Oriental

1 tsp garlic, minced
2 tbsp olive oil
4 oz boneless skinless chicken breast, cooked and diced
4 oz broccoli
2 cups chicken broth
1 1/2 cups instant brown rice
1 1/2 cups spinach, shredded
1 tbsp soy sauce

Recipe Directions for Chicken-Rice Oriental

Saute garlic in oil until lightly browned. Add chicken, green pepper, and broth. bring quickly to a boil over high heat. Stir in rice, reduce heat to low, and simmer for 5 minutes. Cover, remove from heat, and let stand for 5 minutes. Just before serving, add spinach and soy sauce, tossing lightly. Serve with additional soy sauce.
