Chicken and Rice Medley Recipe

Makes 4 servings



Great for using up left over chicken. Simple and quick. Only takes @ 40 minutes total to make from start to finish. Note: You can use any medley of vegatables as long as you do not exceed 2 cups in total.

Recipe Ingredients for Chicken and Rice Medley

1 lbs chicken breast, cooked cut in peices
1 tablespoon olive oil
14 ounces chicken broth, ready to use
1 cup carrots, sliced
1 cup broccoli, cut in small peices
1/2 teaspoon basil, dried
2 cloves garlic, minced
3/4 cup long grain rice, white, uncooked

Recipe Directions for Chicken and Rice Medley

  1. In a large frypan heat oil. Meduim heat.

  2. Add carrots, broccoli and garlic, saute about 2 minutes.

  3. Add basil, broth, cooked chicken and rice.

  4. Cover and bring to a boil, reduce heat and simmer 15 minutes or until all liquid is evaporated.

  5. Remove from heat and let stand covered for 5 minutes, then serve.
