Recipe Ingredients for Chicken & Rice Medley Casserole

1 cup rice medley, uncooked
2 cups water
10 oz mushroom soup
650 grams chicken thighs, cut up
1 (large) spanish onion, chopped
1 tbsp olive oil
1/2 cup chopped red bell pepper

Recipe Directions for Chicken & Rice Medley Casserole

  1. Fry chicken briefly in oil. Remove from pan, add rice and onion brown awhile. Then add 1 cup of the water, then add mushroom soup and blend well before adding the second cup of water.

  2. Add whateverr spices you may wish, and the chicken.

  3. Simmer about 45 minutes until water is completely absorbed.

  4. Add red pepper at the last minute if you wish.
