1/2 cup rice
1/4 dried shitake mushrooms
1/2 cup chicken breast
1/4 red peppers
1/2 cup low sodium chicken stock

Recipe Directions for chicken rice leftover lunch

  1. combined mushrooms and rice and cook according to directions.

  2. once complete add chicken and peppers together with rice and mushrooms in fry pan

  3. fry no oil just to heat chicken and give a wilting affect to the peppers
