Recipe Ingredients for Chicken and Rice Italian Style

2 lb Chicken Breast, Skinless, Boneless
1 onion (medium)
1 Zucchini (medium), Shredded
5 tsp Canola Oil
1/2 tbls Marjoram
1/2 tbls Basil
1/2 tbls Oregano
20 ounce Tomatoes, Diced, Hunts
3 cloves Garlic, diced
3 cups Rice, long grain, cooked

Recipe Directions for Chicken and Rice Italian Style

  1. Place 1 tablesoon (equal to 3 tsp) Canola Oil in Large Fry pan on medium to med. high heat, cut chicken into 4 oz pieces (1 half of full breast into 2 pieces), add onion to oil and saute until golden brown add chicken cook until golden brown on both sides, then add garlic, basil, marjoram and oregano, let simmer for 1 min., and add the zucchini and tomatoes.

  2. Cook rice as directed seperately.

  3. Let chicken and tomatoes cook on simmer until rice is completed cooking.

  4. Serve 1/2 cup rice with 1 piece of chicken and sauce.
