Recipe Ingredients for Chicken & Rice with garlic

30 oz boneless, skinless Chicken breast
3 cup Rice, Brown, Medium-grain, Cooked
3 large Egg, White
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 tsp Garlic
3 tbsp, leaves Basil, Dried
2 tbsp Parsley, Dried
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Chicken & Rice with garlic

  1. Cut the chicken into 1-inch cubes and brown in medium skillet, seasoned with 2 Tbsp basil.

  2. Saute tomato in a small skillet, using extra virgin olive oil and 1 Tbsp basil.

  3. Cook egg whites in small skillet, seasoned with parsley.

  4. Cook brown rice (preferably not instant) according to package directions.

  5. Mix chicken, egg and rice in a large skillet over medium heat; add garlic. Cook for 2 - 3 minutes, stirring constantly.

  6. Makes six 8 oz. servings.
