Easy chicken & rice baked with enchilada sauce and black olives.

Recipe Ingredients for Chicken & Rice Enchilada Casserole

1 cup long grain rice
1 1/5 lbs. boneless chicken breasts
4 oz enchilada sauce
3 cherry tomatoes
5 black olives
1 cup reduced fat cheddar cheese
1 tablespoon butter
1/8 tsp. salt
1/8 tsp. pepper
1/4 tsp. cumin

Recipe Directions for Chicken & Rice Enchilada Casserole

  1. Cut chicken breasts in half lengthwise.

  2. Season chicken and lightly pound to flatten.

  3. Brown chicken in saute pan until cooked through.

  4. Brown rice dry with 1 tsp. butter.

  5. Add 2 cups water, tomatoes, and seasoning.

  6. Bring to boil, reduce, and simmer 20 min.

  7. Place cooked rice in casserole dish.

  8. Place chicken on top.

  9. Top with sauce, olives, and cheese.

  10. Cover and back 10-15 min.
