Recipe Ingredients for Chicken & Rice in Claypot

2 cup Thai Jasmine Rice
3 tbsp Vegetable Oil, Canola
0.5 medium raw Onion Yellow
3 cloves Garlic
2 tsp Five Spice
4 tsp Ginger Root
8 thigh, bone and skin removed (yield from 1 lb ready-to-cook chic Chicken, broilers or fryers, thigh, meat only, raw
8 mushrooms Dried Black Mushrooms
3 tbsp Soy Sauce
3.5 cup Chicken Stock
0.25 tbsp Fish Sauce
0.25 tsp Salt, Table
0.5 cup Mushrooms, Straw
3.88 oz Beans, Snap, Green
2 medium raw Carrots
1/4 cup chopped Green Onions
1 serving, raw Cilantro

Recipe Directions for Chicken & Rice in Claypot

  1. Brown the rice in a nonstick fry pan over low heat, just so it turns opaque, about 5 minutes. Remove from heat & set aside.

  2. Heat the oil in a Dutch oven over moderate heat. Add the yellow onion and garlic and stir-fry until fragrant, about 30 seconds. Add the five-spice powder & ginger and stir-fry for one minute. Add the chicken, black mushrooms (soaked in hot water for 30 minutes before start), soy sauce, and saute for 3-4 minutes. Add the browned rice, boiling chicken stock, fish sauce, and salt. When the broth comes to a boil, reduce heat to low. Stir in the mushrooms, beans, and carrots and cover. Cook until liquid has evaporated and rice is tender, about 15 more minutes. Stir in the green onions & fluff rice with fork.

  3. To serve, transfer to a large platter or individual plates and garnish with cilantro. Serve with soy sauce (or cilantro-lime soy sauce) on the side.
