Old family favorite. Just the way Mom makes it. Gluten free.

Recipe Ingredients for Chicken Rice Casserole

3 breasts, chicken
1 cup uncooked rice
1/4 cup margarine
1/4 tsp salt
2 tsp dried parsley, divided
1 onion powder, to taste
2 cups cooked broccoli
1 1/2 cups colby jack cheese, shredded

Recipe Directions for Chicken Rice Casserole

  1. Preheat oven to 350 degrees.

  2. Chop up chicken. Cook with 1 tsp parsley on stove top.

  3. Cook rice with margarine & salt as directed.

  4. Steam broccoli.

  5. Combine cooked chicken, rice, & broccoli in 9"x13" casserole dish. Cover with shredded cheese.

  6. Bake until cheese is thoroughly melted.
