This is like tuna rice casserole, but with canned chicken instead. Season as desired.

Recipe Ingredients for Chicken Rice Casserole

4 slices low-fat american cheese
10 1/2 ounces cream of mushroom soup
5 ounces chicken, canned in water
14 1/2 ounces tomatoes, canned whole peeled
1 cup uncooked brown rice

Recipe Directions for Chicken Rice Casserole

  1. Cook rice: Combine 1 cup dry brown rice with 2.5 cups water and boil for 45-50 minutes or until fluffy.

  2. In a 2-quart casserole dish, mix together cooked rice, mushroom soup, chicken, tomatoes and desired spices (such as oregano, italian seasoning, etc.)

  3. Layer cheese on top.

  4. Bake uncovered at 350F for 40 minutes or until cheese is browned.
