Recipe Ingredients for Chicken and Rice Casserole

1 1/4 cups long grain white rice, uncooked
1 lb turkey sausage, sliced
2 cups chicken, cooked
1 large onion, diced
2 green peppers, diced
1 red pepper, diced
1 can cream of celery soup
1 1/2 cups milk
2 eggs
1/2 cup grated cheddar cheese
1/2 cup light mayonaise

Recipe Directions for Chicken and Rice Casserole

  1. Cook chicken. Spoon out onto cutting board. Cook rice in chicken broth.

  2. Dice chicken and sausage. Mix with onions, peppers, mayo, and spices.

  3. Fill two 9" pie pans by putting in a layer of rice, a layer of chicken and sausage, then another layer of rice.

  4. Whisk together eggs, soup, and milk. Pour over each casserole.

  5. Bake, covered in foil, at 325* for 30 min. Remove foil, sprinkle with cheese, and bake another 10 minutes.
