Southwestern style Chicken and Rice casserole

Recipe Ingredients for Chicken and Rice Casserole

8 ounces tortilla chips (about 2 cups)
6 tbsp butter, unsalted, melted, divided
1 onion, medium, minced
2 bell peppers, red, medium, chopped
2 peppers, jalapeno, minced
1 tsp. cumin, ground
1/8 tsp. cayenne pepper
1 tsp. salt
3 garlic cloves, minced
1/4 cup flour, all-purpose
3 1/2 cups milk, whole
3 1/2 cups chicken broth, low-sodium
1 1/2 cups rice, white, long-grain
1/8 tsp. black pepper, ground
1 lb. chicken breasts, boneless, skinless
16 ounces pepper jack cheese, shredded
15 1/2 ounce black beans, drained and rinsed
1 1/2 cups corn, frozen, thawed and drained
2 tbls cilantro leaves, chopped

Recipe Directions for Chicken and Rice Casserole

  1. Process the tortilla chips and 2 Tbls. of butter in a food processor until coarsely ground.

  2. Heat oven to 400 degrees. Melt 4 Tbls. botter in a dutch oven over medium heat. Add the Onion, bell peppers, jalapenos, cumin, cayenne, and salt: cook, stirring occasioinally, until the vegetables are softened, about 10 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the flour and cook, stirring constantly, until golden, about 1 minute. Slowly whisk in the chicken broth and milk; bring to a simmer, whisking often. Stir in the rice and pepper and return to a simmer. Turn the heat to medium-low, cover, and cook, stirring often, until the rice has absorbed much of the liquid and is just tender, 20 to 25 minutes.

  3. Add the chicken and continue to cook uncovered over medium-low heat, stirring occasionally, until no longer pink, about 4 minutes. Off the heat, stir in the Pepper Jack, black beans, and corn.

  4. Pour mixture into a 9 x 13 inch casserole dish and sprinkle with tortilla-crumb topping. Bake 20-25 minutes or until the topping is golden brown.
