Chicken and Rice with Black Beans

Recipe Ingredients for Chicken and Rice with Black Beans

10 oz Yellow Rice
1 c chopped onions
1/2 c chopped green bell pepper
1/2 c chopped carrots
1 tbsp olive oil
2 c cooked chicken
15 oz black beans, drained
10 oz Diced Tomatoes and Green Chilies
16 oz Monterey Jack Cheese

Recipe Directions for Chicken and Rice with Black Beans

  1. preheat oven to 350. Perpare Rice according to package.

  2. Saute Onion, bell pepper, and carrots in oil over medium heawt for 10 minutes or until tender.

  3. Combine hot cooled rice, onion mixture, chicken, beans, tomatoes and 3 cups of cheese in a large bowl.

  4. Spoon mixture in a 13x9 baking dish.

  5. Bake covered for 30 minutes.

  6. Uncover and bake for 10 minutes or until cheese is melted.
