I make this recipe for my husband and I and we only use one chicken breast though the original recipe called for a pound of chicken.

Recipe Ingredients for Chicken and rice bake

1 cup, chopped or diced Chicken, Light Meat, Meat Only
1 cup Rice, Brown, Medium-grain, Cooked
1/2 cup Cream of Mushroom Soup
1 serving Ground Cumin
1 tsp Pepper, Black
1.5 cup (8 fl oz) Water

Recipe Directions for Chicken and rice bake

  1. preheat oven to 375 degrees

  2. 1 Chicken breast, skin, bone, and excess fat removed

  3. Stir all the ingredients except chicken in shallow baking dish (9X13) then add chicken

  4. sprinkle chicken with additional seasoning.

  5. bake at 375 45 minutes to an hour or until rice and chicken are done.

  6. Can top with cheese (not included in above Nutrition facts) If so put in oven additional 5 minutes to melt.

  7. I serve with broccoli or California blend veggies.
