Skinless, boneless chicken breasts poached in a red sweet pepper sauce.

Recipe Ingredients for Chicken in a red sweet pepper sauce - India

1 kg boneless, skinless chicken breasts
1 large onion, peeled and coarsely chopped
1 tablespoon of ginger, peeled and coarsely chopped
3 cloves of garlic, peeled
2 1/2 tablespoons of slivered almonds
3/4 lb (350g) of sweet red peppers, trimmed, seeded and coarsely chopped
1 tablespoon ground cumin
2 teaspoons ground coriander
1/2 teaspoon turmeric
1/8 teaspoon of cayenne pepper
2 teaspoons of salt
7 tablespoons vegetable oil
1 cup (222ml) of water
2 tablespoons of fresh lemon juice
1/2 teaspoon of black pepper

Recipe Directions for Chicken in a red sweet pepper sauce - India

  1. Combine onion, ginger, garlic, almonds, peppers, cumin, coriander, turmeric, cayenne pepper and salt in a food processor or blender and blend until you have a paste

  2. Put the oil in a large, wide pan and heat it over medium - high heat,

  3. When hot, pour in all the paste from the food processor or blender.

  4. Stir and fry the paste for 10 - 12 minutes or until you can see the oil forming tiny bubbles around it.

  5. Put in the chicken, with the 1 cup (225ml) of water, lemon juice and black pepper.

  6. Stir to mix and bring to a boil.

  7. Cover, turn heat to low and simmer gently for 25 minutes (3 on the dial of an electric stove) or until the chicken is tender.

  8. Stir a few times during this cooking period.
