Chicken and Red Pepper Quesadilla

Recipe Ingredients for Chicken and Red Pepper Quesadilla

1 flour tortilla
1 ounce chicken
1/2 ounce monterey jack cheese
1 ounce red bell pepper
2 tsp olive oil
1/4 c onion, diced
3 cloves of garlic, minced

Recipe Directions for Chicken and Red Pepper Quesadilla

  1. saute onion and garlic in 1 tsp olive oil

  2. grate cheese

  3. drain and rough chop roasted bell pepper

  4. layer on 1/2 of the tortilla the following

  5. onion and garlic

  6. chicken

  7. red pepper

  8. cheese

  9. fold in half and grill on grill with 1 tsp of olive oil until golden

  10. serve with 1 ounce of Nancy's Summer Salsa
