Chicken and varied vegetables in curry sauce with just enough kick.

Recipe Ingredients for Chicken Red Curry

1 cup, chopped or diced Chicken, Breast, Meat Only

Recipe Directions for Chicken Red Curry

  1. Slice chicken breasts in roughly 1-2 inch pieces and toss into sauce pan with cooking oil together with vegetables.

  2. Sautee together for 5-8 minutes on medium heat.

  3. Drain and set aside.

  4. Mix 14 oz coconut milk, 1 tbsp red curry paste, 2 tbsp peanut butter, 1 tbsp fish sauce, 1 tbsp paprika, red pepper flakes, and dash of basil.

  5. Mix in the sauteed chicken and vegetables into the sauce and simmer for 10 minutes.

  6. Serve over rice and garnish with cilantro and/or basil.
