Recipe Ingredients for chicken, red beans, and rice

1/2 cup cooked jasmine rice
3/4 cup of red beans
12 oz shredded chicken breast
3/4 cup salsa

Recipe Directions for chicken, red beans, and rice

  1. coat boneless, skinless chicken with olive oil and rub in cajun seasoning

  2. put in a small roasting pan with 1/2-1 cup water and bake at 325 for 1-2 hours, until it can be shredded easily

  3. meanwhile, prepare 2 cups of jasmine rice and add red beans to the rice

  4. layer rice and beans with chicken

  5. top with salsa
