It's based off of eat better america's turkey ratatouille... not the exact recipe because I only had chicken breast and added my own onion & extra zucchini. the bell peppers are frozen, but i couldn't figure out how to make the recipe take that.

Recipe Ingredients for chicken ratatouille

10 oz boneless skinless chicken breasts, cut into 3/4 inch pieces
1/8 tsp pepper
1 tbsp olive oil
14 oz bell peppers, strips
1 med onion, chopped
1 eggplant, cubed (2 cups)
2 small zucchini, cubed (1 cup)
14 1/2 oz italian style stewed tomatoes, undrained
1/4 c parmesan cheese, shredded

Recipe Directions for chicken ratatouille

  1. Sprinkle chicken with pepper.

  2. Heat oil in 12-inch nonstick skillet over medium-high heat. Cook turkey in oil 3 to 5 minutes, stirring occasionally, until brown.

  3. Stir in stir-fry vegetables. Cook 2 minutes, stirring occasionally. Stir in eggplant and zucchini. Cook 2 to 4 minutes, stirring occasionally, until vegetables are tender.

  4. Stir in tomatoes; reduce heat. Cover and simmer 3 to 5 minutes, stirring occasionally, until sauce is desired consistency. Sprinkle each serving with cheese.
