A delicious main dish served over quinoa. If you don't have sundried tomatoes, one tomato works well.

Recipe Ingredients for Chicken with Quinoa and Veggies

1 cup quinoa, rinsed then cooked
2 cups chicken broth
2 T. olive oil
2 cloves garlic, chopped
1 small onion, chopped
2 cups chicken breast, cooked and cubed
1 zucchini, thinly sliced
1/2 cup sun dried tomato, chopped
1 T. basil, crushed
1/4 cup feta cheese, crumbled

Recipe Directions for Chicken with Quinoa and Veggies

  1. Cook quinoa in chicken broth.

  2. Saute garlic and onion in olive oil until onions are translucent.

  3. Add the zucchini and tomato and cook until tender.

  4. You may need to add a little water if skillet is too dry.

  5. Add precooked chicken and cover and cook 5 to 8 minutes.

  6. Add feta cheese and basil and cook for 10 more minutes.
