Garlic Chicken Stir Fry with Quinoa, Peppers, and Basil

Recipe Ingredients for Chicken Quinoa Stir Fry

1 cup Quinoa
1 red pepper
1 yellow pepper
1 small onion
5 cloves garlic
1 lb boneless skinless chicken breast

Recipe Directions for Chicken Quinoa Stir Fry

  1. Bring 2 cups of water and Quinoa to a boil. Reduce heat and simmer for 10-15 mins until all water is absorbed.

  2. Cut the chicken into 1inch cubes.

  3. Heat a nonstick skillet over high (add extra virgin olive oil if necessary). Add the chicken. Saute until golden brown.

  4. Add onions and peppers. Saute 2 mins.

  5. Add garlic and saute until peppers are limp.

  6. After 2 mins season with salt and pepper (optional).

  7. Remove from heat. Add quinoa and basil and toss.
