Recipe Ingredients for Chicken Quinoa Soup

3 chicken breast
6 cups vegetable broth
1 cup onion
1 cup celery
3/4 cup potato flakes
2 tablespoons margarine
1 cup quinoa
2 cups peas

Recipe Directions for Chicken Quinoa Soup

  1. Cube 3 chicken breasts

  2. Saute with onion and celery until onions are clear.

  3. Spice to taste, I use a little salt and pepper, bay leaves. The vegetable broth is very flavorful and not much is needed.

  4. Add vegetable broth and cook for one hour.

  5. Add potato flakes, margarine and peas, cook for 15 minutes.
