Healthy quinoa and grilled chicken salad recipe

Recipe Ingredients for Chicken Quinoa Salad

1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 tbsp Oil Olive Extra Virgin
1 cup, pieces or slices Mushrooms
12 oz Chicken
1 cup, pieces or slices(70 g) Mushrooms
0.5 cup (uncooked) Quinoa

Recipe Directions for Chicken Quinoa Salad

  1. In skillet, saute mushrooms and garlic. Take out sauteed mushrooms and begin sauteing chicken.

  2. In another pot, boil water. Pour in quinoa and leave on stovetop until tender.

  3. Dice tomato and combine fresh tomato with cooked quinoa, vegetables and chicken. Add garlic powder, extra virgin olive oil, crushed red pepper. Stir together and serve.
