Recipe Ingredients for Chicken quiche 1

1 cup flour
6 tsp cold butter
1 tsp white tequila or vodka, chilled
4 medium eggs
1/2 cup half and half or heavy cream
6 ounces cream cheese
5 ounces gouda cheese
2 ounces monterey jack cheese
2 tbsp parmesan cheese
1 medium zuchinni, diced
1 small onion, diced
2 cup mushrooms, sliced
1/2 cup green bell pepper, diced
3 peppers, serrano, diced
5 ounces rotisserie chicken, shredded
1 tbsp butter
1 tsp olive oil
1/4 tsp salt
1/8 tsp pepper
1/4 tsp garlic
2 chipotle peppers
2 small tomatoes, diced

Recipe Directions for Chicken quiche 1

  1. Cut cold butter and 1 oz of the cream cheese into flour till it resembles a coarse meal. You can season the flour with salt pepper and some parmesan cheese for a boost of flavor. Bring it all together with chilled vodka or white tequila and additional cold water if needed.

  2. Press crust into greased pan and chill 20 min. Poke holes with fork and blind bake for 15 min. Set aside to cool.

  3. Sautee all vegetables with butter, olive oil seasonings and garlic. Set aside to cool.

  4. In a blender, mix eggs, cream cheese and half and half.

  5. Spoon vegetable mixture into pan with cooled pie crust. Sprinkle gouda cheese. Pour egg mixture over it and stir to distribute vegetables, cheese and chicken. Sprinkle with remaining monterey and parmesan cheeses.

  6. Bake covered with aluminum foil for 20 min at 375 F. Remove aluminum foil and bake for 15 min longer or until center is set. Recommended to place a pan with boiling water in oven to prevent drying out.

  7. Let cool at least 10 min before serving
