Recipe Ingredients for Chicken Quesadillas

16 oz Fresh Boneless Skinless Chicken Breasts
1 tbsp Vegetable Oil
1 medium (2-1/2" dia) Onions
6 oz Peppers, Chili, Green, Canned
4 tortilla 96% Fat Free Heart Healthy Tortillas
1 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese
0.25 cup Cream, Sour, Reduced Fat, Cultured

Recipe Directions for Chicken Quesadillas

  1. Preheat oven to 350. Sprinkle chicken with salt and pepper.

  2. Heat oil in skillet, cook chicken until brown. Remove to cool.

  3. Add onion to same skillet, cook until translucent, add chili peppers and cook 2 to 3 minutes.

  4. Chop chicken into bite-sized pieces. Return to skillet and stir to mix.

  5. Warm tortillas, fill each with 1/4 chicken mixture. Top with 1/4 cup mozzarella cheese, fold over and bake 10 minutes or until cheese melts.

  6. Serve with sour cream, if desired.
